There are many foods and ingredients that conjur up the image of christmas, and one of these for me is cranberry!
This versatile little fruit can be paired with turkey, chicken, red cabbage (recipe coming soon!), brussel sprouts, cake, muffins, salsa, chutney, pancakes and more. And now we've come up with a lovely additional recipe.
These delicious crumble bars are the perfect treat during the festive season! Perfect for afternoon treats, or even as a breakfast alternative, they work brilliantly with cranberry jelly. For a truly festive touch, you could fill with mincemeat!
Cranberry Crumble Bars
Prep time: 10 minutes
Cook time: 40 minutes
Yield: 12 portions
You will need:
- 4oz (110g) dark brown sugar
- 5oz (150g) gluten free self-raising flour
- ¼ tsp baking powder
- 7oz (200g) gluten-free porridge oats
- 4oz (110g) dairy-free spread
- 4 tbsp (55ml) dairy-free milk
- 8oz (225g) cranberry jelly
Method:
Preheat the oven to 175°c/ 350°f/ Gas 4 and grease and line an 8” square baking tray.
Place the sugar, self-raising flour, baking powder, and porridge oats in a large bowl and stir until well combined.
Then add the dairy-free spread and dairy-free milk and continue to stir until you have a crumbly mix.
Turn 2/3 of the mix into the prepared baking tray and then press to create a flat surface.
Spread the cranberry jelly over the flattened crumble mixture, remembering to leave a 2cm gap around the edge so the cranberry jelly doesn’t escape during the cooking process.
Sprinkle the remaining crumbly mix over the top of the cranberry jelly, before very lightly pressing it down to stick.
Place in the preheated oven to bake for around 40 minutes, or until golden in colour.
Remove from the oven and leave to cool before slicing into 12 squares and serving.

Christmas is a wonderful time of year for Foodies. It’s full of delicious aromas, enticing dishes, and the chance to create some fantastic fayre. Sounds fabulous doesn’t it! Now imagine you are new to the free-from journey, and it can suddenly seem a bit daunting.
BUT, fear not, we are here to help!
How so?
Well, we challenged ourselves to put together an amazing collection of festive food to help you out, that just so happen to be free of the top 14 recognised allergens! We’ll be bring you enough festive recipes over the next 2 weeks to see you through the festive period.
Oh yes, we have delicious gin brined chicken from the lovely Mel at Le Coin de Mel, and it is to die for!!
The talented Vicki at Free From Fairy has shared a truly scrummy roasted carrot and cumin dip along with free-from breadsticks!
Our recipe features today, and then tomorrow, Emma from Free From Farmhouse will be sharing her festive recipe before passing the baton on to Jo at Paleo Crust!
Why are these recipes different?
We wanted to show you that you can create allergy friendly food that is still fun, simple to make, appealing and most importantly taste truly delicious!
One of the key things we are all working to, is that all the recipes need to be free of the top 14 allergens as recognised by the legislation that came into effect in December 2014.
Top 14 allergens
- cereals containing gluten: wheat, rye, barley, oats (if not gluten-free)
- dairy
- eggs
- soya
- lupin
- sesame
- celery and celeriac sulphites
- mustard
- fish
- tree nuts (almonds, hazelnuts, walnuts, cashews, pecans, brazils, pistachios, macadamia nuts)
- peanuts
- molluscs
- crustaceans
Hopefully this will mean that this project will help lots of you to enjoy lots of festive yumminess this year!
