Hello and welcome to ‘The Intolerant Gourmand’, set up by Nathalie, who works as a freelance ‘freefrom’ recipe developer, food writer, consultant, trainer, reviewer and blogger. Nathalie is currently studying to become an accredited Nutritional Therapist.

Nathalie is mum to Chloe, a healthy little girl, and her younger brother Callum, who suffers with multiple severe allergies, severe eczema and asthma. It took 16 long months, and numerous hospital attendances and admittances before Callum finally received a diagnosis.

Following a confirmed diagnosis, Nathalie was determined to ensure that her fight to get Callum better shouldn't be in vain and ‘The Intolerant Gourmand’ was born. Due to having such a restricted diet, it was very important to Nathalie to make sure that Callum didn't miss out on wholesome, good, scrummy food that didn't impact on taste and could cater for his allergies. As a result, ‘The Intolerant Gourmand’ has gone back to basics. With a lot of hard work, research and trialing alternatives, Nathalie has managed to overcome the challenges of catering for Callum’s severe allergies, creating, and developing as many recipes as you can possibly think of, to cater for dairy-free, egg-free, tomato-free, wheat-free, gluten-free and more.

Year on year, more and more young babies and children are being diagnosed with allergies, and being admitted to hospital following complications due to the lack of primary care support, and it is becoming a big burden on the NHS as they try to cope with this situation. Parents are not being listened to due to the lack of understanding within the healthcare system of how serious a problem eczema and allergies are! The Intolerant Gourmand is passionate about turning this around, educating health care professionals and providing them with first-hand knowledge.

In addition, Nathalie has written booklets to give to parents of newly diagnosed children at clinic, to help them understand, and teach them easy to implement tips and tricks of how to live with allergies, eczema and asthma, whilst providing invaluable knowledge of where to find safe food and household items.
