If you’re like me, and prefer homemade dips to shop bought, then this salsa is perfect. It’s also a great sauce for when making homemade pizza, and adding to lasagne, bolognese and more!

There is nothing better than a super quick and simple recipe, and this definitely achieves all of this. Added to that the easy to source and cheap ingredients, and you're on to a winner!

For me, there's always something very pleasing about using fresh ingredients, the end result always tastes better, and it's certainly true for this recipe. Tinned tomatoes just wouldn't give the same result as fresh tomatoes.

The added bonus has to be that not only are tomatoes a great 'fast' food, they're also packed full of goodness, and incredibly versatile. With a beautiful colour, rich texture and wonderful taste, tomatoes can be used in so many dishes, or as a main ingredient on their own.

As a busy working mum, this recipe offers a really quick solution that will take you under 30 minutes to make, and with minimal ingredients and effort.

You will need:

  • Olive oil
  • Punnet of tomatoes (roughly 1kg) – skinned, deseeded and chopped into quarters
  • 1 red pepper – skinned, deseeded and chopped into quarters
  • 1 onion – peeled and chopped
  • Handful of basil – chopped
  • Pinch of ground pepper
  • Pinch of chilli flakes
Method:

Preheat the oven to 180°c/ 360°f/ Gas 4, and place the tomatoes and chopped pepper in a roasting tin. Drizzle with the olive oil, sprinkle over the ground pepper and place in the oven to roast for around 15-20 minutes.
 
10 minutes before the end of the cooking time for the tomatoes, add the chopped onion to a large saucepan along with 1 tbsp olive oil, and gently fry until the onion softens.
 
Remove the roasted vegetables from the oven, and leave to cool slightly before transferring to the saucepan, including all the juices, and stir in with the onion.
Add the chopped basil, seasoning and chilli flakes and stir well before removing from the heat.
 
Leave to cool slightly before serving with tortilla chips, fajitas, wedges and more.
