Spicy Chickpea Bites 3

 

Chickpeas tend to be used as the base for hummus, but they are so versatile and can be used for so much more!

I’ve been experimenting with chickpeas and chickpea liquid for a client, and had an abundance of chickpeas left over. I’m not one for waste, so I used some of them to create this tasty snack!

I really love chickpeas as they are high in protein and fibre and packed with vitamins and minerals. They’re also great for IBS sufferers such as myself to up their fibre intake without it causing issues.

With this recipe, the chickpeas turn into crunchy bites bursting with flavour. They’re great as snacks, sprinkling on soups, using in salads or crunching up to add to breadcrumbs when coating fish or chicken.

Sounds lovely doesn’t it!

You will need:

  • 1 can of chickpeas – drained and chickpeas reserved
  • 2 tbsp olive oil
  • 1 tsp garlic salt
  • Pinch of crushed chillies

Method:

Preheat the oven to 200°c/390°f/ Gas 5 and grease and line a baking tray.

Place all of the ingredients into a large bowl, and stir until everything is covered well with the oil.

Turn out onto the prepared baking tray and place in the oven to bake for around 30-35 minutes.

Remove from the oven and leave to cool before serving.
