When you think of childhood treats, chocolate crispie cakes are right up there as favourites! They’re a staple in many homes and we’ve now come up with a free-from version with a little twist to help you recreate that childhood magic!

With Easter just around the corner, thoughts are now turning to chocolate treats! We've got a fab easter egg recipe for you, but it’s also the best excuse in the world to dive right into a chocolate fest, and what better way than with a recipe that the whole family will love!

I tested this recipe out on Callum and Chloe, with them both helping me make it, and we had so much fun! They also had a lot of fun taste testing, so much so, I had to make more to get some images for this post!

Using simple every day ingredients, it takes just minutes to make, and will be sure to leave you all smiling!

You will need:

  • 3oz (75g) coconut oil
  • 1 large packet mini marshmallows – reserving a handful for decoration
  • 2 x 85g bars dairy free chocolate
  • 5oz (150g) crispies

Method:

Lightly grease and line a baking tray/ loaf tin with greaseproof paper.

Place the coconut oil, mini marshmallows and dairy-free chocolate in a large saucepan, and melt over a medium heat until fully melted. (NB: Use a lightly oiled wooden spoon or silicon spatula to stir regularly)

Remove the saucepan from the heat before pouring the crispies on top of the melted chocolate mix, and gently stir until the crispies are fully coated and well combined.

Pour the mixture into the prepared baking tray/muffin tin, sprinkle the remaining marshmallows over the top, cover with clingfilm and then place in the fridge for 30 minutes to set.
