After what seems like a particularly long and dreary Spring, it looks like Summer is finally on its way. Longer days, more sunshine, warmer evenings, it’s a lovely time of year.

If you’re anything like our family, we try to spend lots of time out and about. Walks in the countryside, geocaching, trips to the park with friends, the list is endless.

Picnics are the perfect accompaniment, and help to make a beautiful day even more fun.

When navigating the minefield that is allergies, picnics can often seem quite daunting. How do you find something to please everyone? Is it even possible to create allergy safe picnic food?

Fear not, we have the answers!

So, to help you out, we’ve teamed up with some of our favourite bloggers again to bring you a feast! Our previous collaboration for pancakes proved really popular, and we’re hoping this collaboration will help you out just as much!

As part of this #Freefrompicnics collection, we’ve come up with a fool proof fruit salad recipe, perfect for warm days, where you’re looking for something refreshing to have for pudding.

Rainbow Fruit Salad

I know I always say it, but it's true! This recipe is ridiculously simple to make, bursting with flavour from the fruit combination and easy to transport pretty much anywhere! In fact, you can get little ones to help you, they'll love it!

You will need:

  • Fresh kiwis – peeled and sliced
  • Punnet of raspberries – washed
  • Punnet of blueberries – washed
  • Banana – peeled and sliced
  • Satsumas – peeled
  • Tablespoon apple juice
  • Honey/maple syrup
  • Pot of Oatly crème fraiche
  • 2 jars with lids
  • Handful of granola (see here for our recipe)
Method:

Add 1 tbsp honey/maple syrup to 1 tbsp apple juice and mix well.

Layer the fruit one at a time in the jars, to create a beautiful rainbow effect.

Drizzle the apple juice mix over the top of the fruit to help preserve it.

In a small bowl, add the crème fraiche and 1 tbsp honey/maple syrup and stir until well combined.

Spoon a large dollop over the top of the fruit.

Sprinkle some granola over the top to finish.

Either serve immediately or place the lid on top to transport.

Enjoy!

This looks perfect for when school's out, but it's also a good reminder that people who avoid certain ingredients really can eat well (and sometimes better!) than people whose ideas of salads or puddings involve lots of eggs, sugar, etc. Fresh fruit and granola sounds heavenly!
