A simple, classic and flavoursome dish, that everyone will love!

You will need:

  • 2 large onions – peeled and finely chopped
  • 2 garlic cloves – peeled and crushed
  • 1 tbsp olive oil
  • 6 large jacket potatoes – washed and sliced thinly
  • 1 pint (570ml) whole a2 Milk™
  • Pinch of salt and pepper to taste

Method:

Preheat the oven to 180c/ 350f, and grease a large roasting tray.

In a frying pan, add the olive oil and onion, and fry over a medium heat for around 2-3 minutes until softened and turning translucent in colour. Remember to stir regularly to ensure the onions don't stick!

Add the garlic and continue to fry for 1 minute before removing from the heat.

To assemble the dish, add a layer of potato slices to the roasting dish, before sprinkling with the onion, garlic, salt and pepper, and then repeating the process. Continue until you have at least 4 layers!

Pour the a2 Milk™ over the top of the potatoes, until the top layer is just about covered.

Place in the oven to roast for around 1hr 30 minutes, until the potato is soft, and the top has turned a golden colour, and is crunch in appearance.

Remove from the oven, and leave to cool slightly before serving as the centre will be very hot!

Note: This recipe pairs fantastically with steaks, bbq’d meats and crispy salad!
