IBS can often leave you with symptoms that can be quite debilitating, such as cramping, and this can take away your appetite. It's important to still ensure that you eat to maintain energy levels, and one way to do this is with soup. It can offer a light yet comforting alternative, and is a great way of boosting your nutrient levels.
Potato & Leek soup is such a classic, and is one of the most comforting and familiar soups you can make. So, it's no wonder that it is a firm favourite in our house!
It's naturally gluten-free, and by using a2 Milk™ it adds an extra creaminess which just adds to the comfort factor.
The beauty of this recipe lies in its simplicity, as it takes just minutes to prepare, and is packed full of nutrients.
You will need:
- 5 large white potatoes – washed and cubed
- 3 leeks – washed and sliced
- 1tsbp Olive oil
- 1 pint vegetable stock
- 4fl oz (125ml) a2 Milk™
- Pinch of salt & pepper to season
Add the potatoes, leeks and olive oil to a large saucepan and cook over a medium heat for around 4-5 minutes until the vegetables start to soften.
Carefully pour the vegetable stock into the saucepan, and stir well before covering with a lid, and reducing to a simmer.
Leave to simmer for around 20-25 minutes, remembering to stir occasionally.
Remove from the heat and leave to cool slightly before blending until smooth.
Return to the heat, and add the a2 Milk™ and seasoning.
Stir well and serve.
