When navigating the minefield that is allergies, Christmas can often seem quite daunting. How do you find something to please everyone? Is it even possible to create allergy safe Christmas food?

Fear not, we have the answers!

So, to help you out, we’ve teamed up with some of our favourite bloggers again to bring you a feast! Our previous collaborations have proved really popular, and we’re hoping this collaboration will help you out just as much!

Now, I had the pleasure of cooking live at the Allergy & Free From Show in Liverpool earlier on this month, and one of the recipes I demonstrated was my simple Christmas cookies!

They take just minutes to make, 15 minutes to bake, and can be left as they are, or decorated – which children love to do!

These biscuits went down a storm during the demonstration, not least because I showed the audience how easy they were to make.

They also smell amazing whilst baking, and once you’ve eaten one, you’ll most definitely be back for more!

You will need:

  • 225g softened dairy-free spread
  • 120g golden caster sugar
  • 275g gluten-free plain flour
  • 1 tsp ground cinnamon
  • 1 tbsp dairy-free milk

Method:

Preheat the oven to 180°c/ 320°f/ Gas 4, and line a baking tray with greaseproof paper.

Place the dairy-free spread in a large bowl, and cream until soft and lighter in colour, before adding the sugar and beating until fluffy and very pale in colour. (This will take around 3-5 minutes)

Then add the gluten-free flour, ground cinnamon, and dairy-free milk to the bowl and stir gently to create a dough. You may need a tiny bit more dairy-free milk to loosen the dough up a bit, so judge as you stir.

Sprinkle a little gluten-free flour onto your work surface and roll out to a thickness of 2 inches.

Use a star cutter to cut star shaped biscuits out of the dough, and place the stars on the prepared baking tray slightly apart. Repeat until all the dough has been used.

Place the baking tray in the oven to bake for around 15 minutes, until golden in colour and firm to touch.

Remove from the oven and place on a wire rack to cool completely.

Either eat immediately, or decorate.
