Smokey Chicken Mini Pizza

A super quick and simple lunch or dinner recipe using the Old El Paso gluten-free fajita kit!

Chicken Mini Pizza

  • 1 pack Old El Paso Gluten Free Fajitas Kit
  • 2 tbsp dairy-free creme fraiche
  • 1 pack cooked chicken chunks
  • 1 onion peeled and sliced
  • 1 green pepper washed and sliced
  • 1 pack grated dairy-free cheese

Smokey Chicken Mini Pizza Directions

Pre-heat the oven to 180c and line a baking tray

Mix the dairy-free yoghurt and seasoning mix in a large bowl until well combined.

Add the chicken to the bowl, and stir gently to coat.

Use a little of the salsa to spread onto a tortilla to act as the pizza sauce.

Add a few chunks of marinated chicken pieces.

Sprinkle some pepper and onion over the top.

Add a little of the grated cheese.

Repeat until you have made enough pizza for everyone, and then place on the prepared baking tray.

Place in the oven to bake for around 8 minutes until lightly cooked and the dairy-free cheese has melted.

Remove from the oven and leave to cool slightly before serving on it's own or with a salad.
