If you’re anything like us, we all love to carve pumpkins in the run up to Halloween! It’s like a ritual, announcing autumn has finally arrived, and embraces our love of produce for this time of year.

When you’re a foodie, you tend to go through quite a lot of produce, to be able to make a large number of different recipes.

I’ve actually lost count of the amount of pumpkins I’ve had to prep for clients recipes, and also my own!

As a result, its felt like I’ve been drowning in all the innards of a pumpkin, the stringy stuff and also the seeds!

Now, you can’t do much with the stringy stuff.

BUT, did you know that the seeds of a pumpkin are actually delicious when roasted!

I kid you not, they’re so good!

And for anyone not able to eat peanuts, they’re a wonderful alternative.

In fact, the humble pumpkin seed is packed full of nutrients and antioxidants, and can even aide poor sleep, overactive bladders and more.

And most of us throw them away in the bin!!
