Sausages are the classic and staple food to go to in many homes, and now Richmond Sausages have created a new spin on the classic and launched chicken sausages.

Having worked in the food industry for a number of years now, it’s no surprise to my readers that I’m a big fan of food and good ingredients. Truth be told, I’m more often than not found in my kitchen, experimenting with various ingredients to come up with new recipes that I then share on here or with clients.

I love food!

So, imagine my delight at being invited to a press event by the iconic Richmond Sausages for the launch of their new Chicken Sausages, with the lovely Angellica Bell, celebrity Masterchef winner, and Richmond Chef, Mat Stephany.

I love my job!

The event was held at the stunning Good Housekeeping Institute Kitchens in London, a light, airy kitchen space, perfect not only for cooking demo’s but also for taking photos of the food created. It’s quite literally a foodie’s dream location!

A collection of the UK’s top bloggers, including the lovely Le Coin de Mel, and key members of the press met whilst sipping prosecco, before Angellica shared 3 classic recipes with a twist.

Now, did you know that the 3 most popular sausage dishes enjoyed in the UK are:

  • Sausages and chips
  • Toad in the hole
  • Sausage and mash

Certainly in my house, they are all deemed as comfort food, and made regularly as they’re the children’s favourites!

So, Angellica has created her own version of these classic popular dishes and gave us a masterclass in how to recreate them.

First up was Toad in the hole, with Angellica demonstrating the perfect way to create batter that rises well.

She used:

  • 1 cup of flour
  • 1 cup of milk
  • 4 eggs
  • Pinch of rosemary
  • Pinch of lemon zest
  • Pinch of salt to season

After whisking all the ingredients together, the trick is to let it rest for a good 30 minutes before using.

Mat’s Top Tip – use equal volumes of everything, by weighing the eggs and then using the same amount of flour and milk. Additionally, if the batter is kept thin, it will rise better. Adding a little water will make the batter lighter and crispier.

We then got to make our own batter and ended up with some really good results, what do you think?

We also got to make our very own baked beans, using the simplest of ingredients, including:

  • Cannellini beans
  • Tomato puree
  • Soy sauce
  • Brown sugar
  • Passata
  • Chopped onion
  • Paprika
  • Dried thyme

They paired beautifully with creamy mash and the Richmond Chicken Sausages. We took a little pot home with us, and Mr Intolerant G loved them!

After all the fun of the cooking masterclass, we then got to eat a delicious lunch, with the chicken sausages taking a starring role to show their versatility!

So why are these new sausages so good?

Not only do they taste great, they’re also a healthier way to enjoy sausages as they contain 30% less fat and 20% less calories, making them a lighter alternative to pork sausages.
