These Breakfast Banana Bites are a wonderful breakfast alternative, perfect for special occasions, or just because! They’re also great snacks for days out too!

This delicious recipe is a great healthy alternative to usual options, you can jazz it up with raisins, sultanas, dried cranberries, or even nuts if you can have them. It’s also ridiculously quick to make and cook!

Callum thoroughly enjoyed making these with me, and couldn’t wait to try them – he almost didn’t let me take any photos (as you can see in the last photos!)

Breakfast Banana Bites 3

You will need:

  • 2 ripe bananas – peeled and mashed
  • 200g gluten-free porridge oats
  • 100ml dairy-free milk
  • 1 tbsp mixed spice
  • 2-3 tbsp honey/ agave nectar/ fruit syrup (depending on how sweet you want it to be)
  • 1 tsp vanilla extract

Method:

Preheat the oven to 180c/350f/ Gas 4 and grease and line a baking dish or brownie tin.

In a large bowl, add all of the ingredients and mix until well combined.

Turn out into the prepared baking dish and level out.

Place in the oven and bake for around 12-15 minutes.

Remove from the oven, and leave to cool before cutting into squares.

Drizzle with a little melted chocolate for an extra Easter twist before serving.
