As it’s Halloween, and we’re swamped with pumpkin, we thought we’d mix things up a bit!

We’ve made the pumpkin pie, pumpkin risotto, pumpkin seeds and more, but what about sweet stuff?

As pumpkin is naturally slightly sweet in taste, it makes sense to use it in a pudding recipe. And what better way, than to give a staple and favourite a go!

All week, we’ve been testing out Bute Island sheeses, and we’ve been extremely impressed, especially by their taste and texture. Considering they’re dairy-free, you really couldn’t ever tell.

So, in honour of their creamy white cream 'sheese', and the fact it’s Halloween and we need to use up an abundance of pumpkin, we’ve created a baked Pumpkin Cheesecake which tastes ridiculously good! It’s an absolute corker, and we hope you enjoy it as much as we do!
